Avocado and lime loaf cake

Ingredients

  • 130 g icing sugar
  • 1 tsp Vanilla extract
  • 1/4 cup buttermilk
  • 1/2 cup Avocado Oil
  • 2 limes, zested
  • 1 cup mashed avocado
  • 2 free range eggs
  • 1 tsp bicarbonate of soda
  • 200 g brown sugar
  • 210 g cake flour

Cooking Instructions

  • Preheat the oven to 180°C.
  • Combine the flour, sugar, bicarbonate of soda and salt. Place the eggs, avocado, lime zest, avocado oil, buttermilk and vanilla in a separate bowl.
  • Whisk the wet ingredients, then stir into the dry ingredients. Do not overmix the mixture; stop mixing as soon as the two are combined.
  • Pour the batter into a greased 20 x 11 cm loaf tin and bake for 1½ hours, or until a skewer inserted comes out clean. Allow to cool, then pour over the lime drizzle.
  • To make the lime drizzle, mix the icing sugar and lime juice until smooth and thick.
