Avocado and lime loaf cake

Ingredients
- 130 g icing sugar
- 1 tsp Vanilla extract
- 1/4 cup buttermilk
- 1/2 cup Avocado Oil
- 2 limes, zested
- 1 cup mashed avocado
- 2 free range eggs
- 1 tsp bicarbonate of soda
- 200 g brown sugar
- 210 g cake flour

Cooking Instructions
- Preheat the oven to 180°C.
- Combine the flour, sugar, bicarbonate of soda and salt. Place the eggs, avocado, lime zest, avocado oil, buttermilk and vanilla in a separate bowl.
- Whisk the wet ingredients, then stir into the dry ingredients. Do not overmix the mixture; stop mixing as soon as the two are combined.
- Pour the batter into a greased 20 x 11 cm loaf tin and bake for 1½ hours, or until a skewer inserted comes out clean. Allow to cool, then pour over the lime drizzle.
- To make the lime drizzle, mix the icing sugar and lime juice until smooth and thick.
