Warm chocolate pudding

Ingredients

  • 75 g butter, softened
  • 1 Tbsp + 1/2 tsp castor sugar, plus extra for dipping the pastry shapes
  • 2 extra-large eggs
  • 5 ml vanilla extract
  • 250 g flour, plus extra for dusting
  • 7 1/2 ml baking powder
  • 50 g cocoa powder, for dusting
  • 1 tsp espresso granules
  • 4 tbsp 1,5 L milk
  • 250 ml fresh Ayrshire cream
  • double thick cream
  • 75 g Canola oil
  • 2 Tbsp Instant coffee granules

Cooking Instructions

  1. Pre-heat the oven to 180°c and grease a medium, oven-proof dish.
  2. In a large bowl, whisk together the butter and sugar.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Sift together the flour, baking powder cocoa powder and espresso powder.
  6. Add the dry ingredients and the milk to the sugar mixture, alternatively.
  7. When all the ingredients are well incorporated, transfer the batter to the prepared dish and place in the oven.
  8. Allow to bake for 25-30 minutes until the pudding is still slightly moist in the middle.
  9. While the pudding is baking, combine the sugar, cream and coffee in a small saucepan and bring to the boil. Allow to simmer for 5 minutes then remove from the heat and set aside.
  10. Remove from the oven and serve with the coffee cream sauce.
