
Warm chocolate pudding

Ingredients
- 75 g butter, softened
- 1 Tbsp + 1/2 tsp castor sugar, plus extra for dipping the pastry shapes
- 2 extra-large eggs
- 5 ml vanilla extract
- 250 g flour, plus extra for dusting
- 7 1/2 ml baking powder
- 50 g cocoa powder, for dusting
- 1 tsp espresso granules
- 4 tbsp 1,5 L milk
- 250 ml fresh Ayrshire cream
- double thick cream
- 75 g Canola oil
- 2 Tbsp Instant coffee granules

Cooking Instructions
- Pre-heat the oven to 180°c and grease a medium, oven-proof dish.
- In a large bowl, whisk together the butter and sugar.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Sift together the flour, baking powder cocoa powder and espresso powder.
- Add the dry ingredients and the milk to the sugar mixture, alternatively.
- When all the ingredients are well incorporated, transfer the batter to the prepared dish and place in the oven.
- Allow to bake for 25-30 minutes until the pudding is still slightly moist in the middle.
- While the pudding is baking, combine the sugar, cream and coffee in a small saucepan and bring to the boil. Allow to simmer for 5 minutes then remove from the heat and set aside.
- Remove from the oven and serve with the coffee cream sauce.
