Ingredients
- 170g butter, softened
- 100g brown sugar
- 200g sugar
- 1 cup maple syrup
- 1 free range egg
- 260g flour
- 1/2 t baking powder
- 1/2 t salt
- 2 t ground ginger
- 1/2 t ground nutmeg
- 200g dark chocolate chunks
- 100g sugar, for rolling

Cooking Instructions
- Preheat oven to 180°C.
- Cream the butter, brown sugar and sugar until pale in colour. Add the maple syrup and egg and whisk until combined.
- In a separate bowl, combine the flour, baking powder, salt, ground ginger, ground nutmeg and chocolate chunks.
- Form a ball with the dough before covering and placing in the fridge for 30 minutes until firm.
- Once the dough has firmed up, begin rolling out 2– 3 cm balls. Spread the extra sugar out in a bowl. Roll the balls of dough in the sugar to coat.
- Place the balls on a greased baking tray and flatten slightly before placing in the oven for 12–15 minutes.
