Ginger biscuits absolutely delicious

If you, like us, have cookies on the brain pretty much 24/7, you might want to give these ginger biscuits with chocolate chips a bash. They’re too good.

Ingredients

  • 170g butter, softened
  • 100g brown sugar
  • 200g sugar
  • 1 cup maple syrup
  • 1 free range egg
  • 260g flour
  • 1/2 t baking powder
  • 1/2 t salt
  • 2 t ground ginger
  • 1/2 t ground nutmeg
  • 200g dark chocolate chunks
  • 100g sugar, for rolling

Cooking Instructions

  1. Preheat oven to 180°C.
  2. Cream the butter, brown sugar and sugar until pale in colour. Add the maple syrup and egg and whisk until combined.
  3. In a separate bowl, combine the flour, baking powder, salt, ground ginger, ground nutmeg and chocolate chunks.
  4. Form a ball with the dough before covering and placing in the fridge for 30 minutes until firm.
  5. Once the dough has firmed up, begin rolling out 2– 3 cm balls. Spread the extra sugar out in a bowl. Roll the balls of dough in the sugar to coat. 
  6. Place the balls on a greased baking tray and flatten slightly before placing in the oven for 12–15 minutes.
