Sweetcorn fritters

Ingredients

  • maple syrup
  • 6 pieces cooked streaky bacon
  • 1 pinch rock salt
  • 1 fresh lime, juiced
  • 1 small fist fresh coriander
  • 1 handful cherry tomatoes
  • 1 avocado
  • 350 g cooked sweetcorn
  • 75 ml milk
  • 2 free range eggs
  • 1 tsp smoked paprika
  • salt and freshly ground black pepper
  • 1 tsp baking powder
  • 100 g plain flour

Cooking Instructions

​100g plain flour
1tsp baking powder
Salt and freshly and ground black pepper
1tsp smoked paprika
2 free-range eggs
75ml milk
350g cooked sweetcorn (from the braai)
1 avocado
Handful cherry tomatoes
Small fist of fresh coriander
Juice of 1 small lime
Pinch of rock salt
6 pieces streaky cooked bacon
Maple syrup (optional for serving)
Hot sauce (optional for serving)
  1. Start by making your guacamole (not traditional guacamole). Quarter your tomatoes, chop your coriander, scoop out your avocado, squeeze on your lime, sprinkle your salt & mash together using a fork. Keep it chunky & leave to one side.
  2. In one bowl place your flour, baking powder, salt, pepper & paprika.
  3. In another beat your eggs & milk together.
  4. Slowly pour your wet bowl into your dry bowl and stir until you get a smooth batter. Add your sweetcorn & mix together.
  5. Fry 3 Tbs of the batter in a pan for 2-3 min per side with olive oil.
  6. Serve with crispy bacon, guacamole, maple syrup and hot sauce options.
