Chicken Korma Paste

Ingredients

  • 400 g free-range chicken breast fillets, cut into medium-sized cubes
  • 1/2 jar Korma paste
  • 1 T vegetable oil
  • 1 T butter
  • 165 ml coconut cream
  • 4 T double cream plain yoghurt
  • fresh coriander
  • roasted cashew nuts, chopped (optional)

Cooking Instructions

  1. Add cubed chicken and paste to a bowl and mix well.
  2. Add oil & butter to a saucepan and bring to medium heat. Add chicken and paste mixture and fry for 5 minutes.
  3. Add coconut cream and yoghurt, stir through and cook gently over medium heat for 10 minutes until the chicken is cooked through.
  4. Season to taste if required.
  5. Garnish with fresh coriander and roasted cashew nuts. Serve with basmati rice.

 

To make roasted korma cauliflower and butternut:

  1. Preheat oven to 220° C and line a baking tray with foil.
  2. Mix ¼ cup of Bombay potato paste with 2 T vegetable oil and 2 T fesh lemon juice in a mixing bowl.
  3. Using 400 g of the precut cauliflower and 400 g of the precut butternut and mix through with paste.
  4. Roast for 35 minutes or until cooked through.
  5. Top with cucumber raita, roasted flaked almonds and fresh coriander to serve.
