Chicken Korma Paste
Ingredients
- 400 g free-range chicken breast fillets, cut into medium-sized cubes
- 1/2 jar Korma paste
- 1 T vegetable oil
- 1 T butter
- 165 ml coconut cream
- 4 T double cream plain yoghurt
- fresh coriander
- roasted cashew nuts, chopped (optional)

Cooking Instructions
- Add cubed chicken and paste to a bowl and mix well.
- Add oil & butter to a saucepan and bring to medium heat. Add chicken and paste mixture and fry for 5 minutes.
- Add coconut cream and yoghurt, stir through and cook gently over medium heat for 10 minutes until the chicken is cooked through.
- Season to taste if required.
- Garnish with fresh coriander and roasted cashew nuts. Serve with basmati rice.
To make roasted korma cauliflower and butternut:
- Preheat oven to 220° C and line a baking tray with foil.
- Mix ¼ cup of Bombay potato paste with 2 T vegetable oil and 2 T fesh lemon juice in a mixing bowl.
- Using 400 g of the precut cauliflower and 400 g of the precut butternut and mix through with paste.
- Roast for 35 minutes or until cooked through.
- Top with cucumber raita, roasted flaked almonds and fresh coriander to serve.
