Rogan Josh
Ingredients
- 45 ml cooking oil
- 3 T Rogan Josh spice
- 300 g lamb cubes, bone in or off
- 70 g tomato paste
- 750 ml beef or veg stock (Woolworths liquid concentrate stick diluted as per pack) or water
- 1 T double cream yoghurt
- 1 T fresh coriander, chopped (optional)
- sugar and salt to season

Cooking Instructions
- Heat the oil in a medium sized pot and fry the spice and lamb for 10 minutes on a medium heat stirring occasionally. Add 1 T of water if sticking to loosen.
- Add the tomato paste and cook for 2 minutes.
- Add the stock and simmer gently on a low heat for 45 minutes with the lid half on. Stir occasionally to prevent the curry catching.
- Stir through the yoghurt and coriander, if using.
- Season with sugar and salt.
