Rogan Josh

Ingredients

  • 45 ml cooking oil
  • 3 T Rogan Josh spice
  • 300 g lamb cubes, bone in or off
  • 70 g tomato paste
  • 750 ml beef or veg stock (Woolworths liquid concentrate stick diluted as per pack) or water
  • 1 T double cream yoghurt
  • 1 T fresh coriander, chopped (optional)
  • sugar and salt to season

Cooking Instructions

  1. Heat the oil in a medium sized pot and fry the spice and lamb for 10 minutes on a medium heat stirring occasionally. Add 1 T of water if sticking to loosen.
  2. Add the tomato paste and cook for 2 minutes.
  3. Add the stock and simmer gently on a low heat for 45 minutes with the lid half on. Stir occasionally to prevent the curry catching.
  4. Stir through the yoghurt and coriander, if using.
  5. Season with sugar and salt.
