Chicken Korma

Ingredients

  • 2 T cooking oil
  • 50 g butter
  • 2 T korma spice blend
  • 400 g chicken mini fillets, cut into 2 or 3 pieces
  • 1 cup double cream yoghurt
  • 165 ml coconut cream
  • 30 g cashew nuts, roasted and chopped (optional)
  • 2 T fresh coriander, chopped (optional)
  • salt to season

Cooking Instructions

  1. Heat the oil and butter on medium heat
  2. Add the chicken and spice and fry for 5 minutes.
  3. Add the tomato paste and fry for 3-5 minutes, stirring continuously.
  4. Add the chicken stock on a medium heat and simmer for 10 minutes, stirring often.
  5. Add the sugar, and season with more salt and sugar to taste.
  6. Garnish with fresh coriander.
