Butter Chicken

Ingredients

  • 2 T cooking oil
  • 4 T butter
  • 400 g mini chicken fillets, cut into 2 or 3 pieces
  • 2 T butter chicken spice blend
  • 70 g sofritto paste
  • 250 ml chicken stock (Woolworths liquid concentrate stick diluted as per pack instructions)
  • 125 ml fresh pouring cream
  • 1 tsp sugar
  • fresh coriander, chopped (optional)

Cooking Instructions

  1. Heat the oil and butter on medium heat
  2. Add the chicken and spice and fry for 5 minutes.
  3. Add the tomato paste and fry for 3-5 minutes, stirring continuously.
  4. Add the chicken stock on a medium heat and simmer for 10 minutes, stirring often.
  5. Add the sugar, and season with more salt and sugar to taste.
  6. Garnish with fresh coriander.
