Butter Chicken
Ingredients
- 2 T cooking oil
- 4 T butter
- 400 g mini chicken fillets, cut into 2 or 3 pieces
- 2 T butter chicken spice blend
- 70 g sofritto paste
- 250 ml chicken stock (Woolworths liquid concentrate stick diluted as per pack instructions)
- 125 ml fresh pouring cream
- 1 tsp sugar
- fresh coriander, chopped (optional)

Cooking Instructions
- Heat the oil and butter on medium heat
- Add the chicken and spice and fry for 5 minutes.
- Add the tomato paste and fry for 3-5 minutes, stirring continuously.
- Add the chicken stock on a medium heat and simmer for 10 minutes, stirring often.
- Add the sugar, and season with more salt and sugar to taste.
- Garnish with fresh coriander.
