Bombay Potatoes/Bombay Aloo

Ingredients

  • 2 T vegetable oil
  • 500 g Everyday medium potatoes or Up to date potatoes
  • 1 T butter
  • Bombay Potato Paste
  • 1 T crispy fried onions, optional
  • fresh coriander leaves to garnish

Cooking Instructions

  1. Boil and peel potatoes and cut into medium sized cubes.
  2. Heat oil in a non-stick pan to medium-high heat. Add the potatoes and fry for 3-4 minutes on all sides until golden brown.
  3. Add butter and paste, gently mix through the potatoes and fry for a further 2 minutes.
  4. Season to taste and garnish with fresh coriander leaves and crispy onions (optional).

 

To make Bombay potato grilled sandwich:

  1. Prepare potatoes according to above recipe, slicing potatoes in thick slices instead of quarters.
  2. Butter 4 slices of white bread or sourdough.
  3. Spread a thin layer of chilli pickle on one side.
  4. Fill with prepared Bombay potatoes and cover with cheese.
  5. Grill sandwich in lightly battered pan.
  6. Cut and serve.
