Asian chicken salad

Ingredients
- 500 g chicken mince
- 2 cloves garlic, peeled and finely chopped
- 1 x 3 cm piece ginger
- 1/2 cup medium red onions, thinly sliced
- 1/2 cucumber, sliced julienne
- 1 red chilli, seeded and chopped
- 2 firm, ripe avocados
- a small bunch coriander, chopped
- 1 tbsp mint, finely chopped
- soya sauce
- 2 1/2 tbsp rice wine vinegar

Cooking Instructions
- Fry the chicken mince, garlic and ginger until golden and fragrant
- Toss with the onion, cucumber, chilli, avocados, coriander, mint and a splash each of lemon juice, soya sauce and rice-wine vinegar
