Spaghetti squash is one of those vegetables that really gets the kids interested in eating vegetables. This squash produces a unique flesh that literally falls apart into a 'vegetable spaghetti'. Spaghetti squash is a productive and easy crop to grow, perfect for people perusing a low carb diet. Best cooked whole (but with holes pierced right through) and then cut open. When cooked, use a fork to separate the flesh into fine spagheti-like strands. Add a little butter and some salt to really bring out the sweet flavour.
