  • diced butternut
  • sorghum
  • fresh butternut soup
  • full cream maas, for drizzling

Creamy butternut soup with butternut chunks, sorghum and amasi

 

  1. Place the butternut in the basket of an air-fryer, spray with olive oil spray and cook at 180º C for 20 minutes.
  2. Cook the sorghum according to package instructions.
  3. Heat the soup, top with the butternut and sorghum and drizzle with maas.

Loadshedding tip: Cook the butternut in the microwave or air-fryer, which takes just 12 minutes. Make extra butternut and freeze so you can defrost if before you make the soup.
