Baked marinated lamb chops

Cook's Tips:Cook leftover chops with rice, crushed tomatoes, cut corn and stock for a meal-in-one pot.

Ingredients

  • lamb chops
  • sea salt and freshly ground pepper, to taste
  • 2 cups dry red wine
  • 4 cloves garlic, crushed
  • 1/2 tsp dried oregano
  • 2 tsp smoked paprika
  • 1/2 tsp crushed chillies
  • 3 Tbsp olive oil, to drizzle
  • mix of salad greens, for serving
  • bay leaves

Cooking Instructions

  1. Preheat the oven to 230°C.
  2. Trim any excess fat from the chops, then arrange in a single row in a baking dish and pour over the marinade.
  3. Tuck a bay leaf under each chop and bake for 10 minutes, or until nicely browned and tender. Serve with potatoes and salad.
