Papaya chicken curry
Ingredients
- 1 tbsp coriander, to garnish
- green chilli, sliced to serve
- papaya, cubed to serve
- 3-4 cups left-over rotisserie chicken, shredded
- sea salt and pepper to taste
- brown sugar, to taste
- 1 red bell pepper, chopped
- 2 tbsp fish sauce
- 1 1/2 cans coconut milk, plus 1/2 can water
- 1 papaya, peeled and cubed
- 1 sweet potato, peeled and chopped into cubes
- 1 tsp ground turmeric
- 2 tbsp Woolworths Thai red curry paste
- 2.5 cm fresh ginger root, peeled and sliced
- 1 red onion, cut into thin wedges
- 6 garlic cloves, peeled and crushed
- 2 tbsp coconut oil

Cooking Instructions
- Pan fry the garlic, red onion, ginger, red curry paste and turmeric for 5 minutes until softened and fragrant.
- Add the sweet potatoes, ripe papaya, coconut milk, fish sauce, red bell pepper and brown sugar to simmer for 40 minutes.
- Serve warm with shredded rotisserie chicken, cubed fresh papaya, green chilli and coriander. Basmati rice or rotis are a delicious accompaniment to this curry.
