Ingredients
- 1 x 1.5-2kg free-range chicken
- 1 onion, quartered
- 3 leeks, chopped
- 4 bay leaves
- 2 carrots, cut into chunks
- 2 sticks celery, roughly chopped
- a few peppercorns
- 6 garlic cloves, roughly chopped
- 375ml chicken/ vegetable stock
- 1 lemon, cut into 8 slices
- 225 g Butter

Cooking Instructions
- Preheat the oven to 160°C.
- In a large casserole dish, arrange the chicken, onion, leeks, bay leaves, carrots, celery, peppercorns and garlic.
- Add the chicken stock, the zest and juice of the lemon and the butter.
- Cover and cook in the oven for 2 hours, or until the chicken is cooked through.
