Chicken pot casserole

Ingredients

  • 1 x 1.5-2kg free-range chicken
  • 1 onion, quartered
  • 3 leeks, chopped
  • 4 bay leaves
  • 2 carrots, cut into chunks
  • 2 sticks celery, roughly chopped
  • a few peppercorns
  • 6 garlic cloves, roughly chopped
  • 375ml chicken/ vegetable stock
  • 1 lemon, cut into 8 slices
  • 225 g Butter

Cooking Instructions

  1. Preheat the oven to 160°C.
  2. In a large casserole dish, arrange the chicken, onion, leeks, bay leaves, carrots, celery, peppercorns and garlic.
  3. Add the chicken stock, the zest and juice of the lemon and the butter.
  4. Cover and cook in the oven for 2 hours, or until the chicken is cooked through.
