Chicken noodle soup

Serves:4

Ingredients

  • 4 Tbsp Butter
  • 1 medium onion, finely chopped
  • 1 large carrot, chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, crushed
  • 1 bay leaf
  • 4 sprigs fresh thyme, leaves picked
  • 2 sprigs fresh rosemary, leaves picked and chopped
  • 500 ml good chicken stock
  • cooked egg noodles
  • 2 chicken breasts, boneless, skinless and cut into strips
  • sea salt and pepper to taste

Cooking Instructions

  1. In a large pot, melt the butter over medium heat then add the onion, carrot and celery and saute until soft and golden brown.
  2. Add the garlic, bay leaf, thyme and rosemary and saute for another 2 minutes.
  3. Pour in the chicken stock and add the chicken breasts and turn the heat down, allowing the broth to simmer and the chicken to cook for 15 minutes (or until the chicken is just cooked).
  4. Remove the chicken breasts from the broth then add the noodles and allow to cook.
  5. Slice the chicken breasts into thin slices then place back into the broth. Allow to simmer for 2-3 minutes.
  6. Season to taste then serve.
