Sparkling fruit jelly and ice cream

Ingredients

  • 2 packets Woolworths fruit salad
  • 250 ml Woolworths sparkling coconut and pineapple water
  • 1 vanilla pod
  • 750 ml apple juice
  • 90 ml cold water
  • 3 tbsp gelatine powder

Cooking Instructions

  1. Mix the gelatin with the cold water and set aside.
  2. Place the apple juice and vanilla pod into a pot and bring to the simmer.
  3. Line a loaf tin with cling wrap.
  4. Dissolve the bloomed gelatin into the hot liquid then add the sparkling water.
  5. Pour some liquid into the base of the tin then fill half the tin with your selection of chopped fruit.
  6. Cover the fruit with the juice.
  7. Place into the fridge to set completely.
  8. Once ready to serve, unmould, slice thickly and serve with a scoop of vanilla ice cream.
