Sparkling fruit jelly and ice cream
Ingredients
- 2 packets Woolworths fruit salad
- 250 ml Woolworths sparkling coconut and pineapple water
- 1 vanilla pod
- 750 ml apple juice
- 90 ml cold water
- 3 tbsp gelatine powder

Cooking Instructions
- Mix the gelatin with the cold water and set aside.
- Place the apple juice and vanilla pod into a pot and bring to the simmer.
- Line a loaf tin with cling wrap.
- Dissolve the bloomed gelatin into the hot liquid then add the sparkling water.
- Pour some liquid into the base of the tin then fill half the tin with your selection of chopped fruit.
- Cover the fruit with the juice.
- Place into the fridge to set completely.
- Once ready to serve, unmould, slice thickly and serve with a scoop of vanilla ice cream.
