Make your own mayo

Ingredients

  • 1 cup sunflower oil
  • 2 tbsp white wine vinegar
  • 1 tsp white sugar
  • 1 tbsp Dijon mustard
  • black pepper
  • 1 garlic cloves
  • 1 egg

Cooking Instructions

  1. In a deep jug, wide enough for your hand blender, add the egg, mustard, sugar, 1 clove of garlic, a pinch of pepper and the vinegar.
  2. Blitz the lot together until the garlic is chopped up and incorporated (about 10 seconds).
  3. Now add the sunflower oil, in a slow steady stream, blending the whole time. A cream coloured mayonnaise will start to form, you might find that you don’t need all the oil. If unsure, stop, taste and decide. If it tastes very acidic, blend in more oil.
  4. After blending, scoop into a sealable bottle and keep in the fridge for up to 1 week.
