Avocado hummus

Makes 2 cups

Ingredients

  • 1 Avocado, cut in half with skin and stone removed
  • 400 g Chickpeas, drained and rinsed
  • 1 garlic clove, peeled and finely chopped
  • 1-2 lemons, juice only
  • handful coriander leaves, finely chopped
  • sea salt, to taste

Cooking Instructions

  1. Blend all the ingredients in a food processor until smooth.
  2. Transfer the avocado hummus to a bowl and cover with cling film.
  3. Chill in the fridge for one hour.
  4. Serve with warm flatbread, or use as a dip or spread.
  5. Serve with a healthy salad or in a wrap, also delicious as a pasta or pizza sauce.
