Avocado hummus
Makes 2 cups
Ingredients
- 1 Avocado, cut in half with skin and stone removed
- 400 g Chickpeas, drained and rinsed
- 1 garlic clove, peeled and finely chopped
- 1-2 lemons, juice only
- handful coriander leaves, finely chopped
- sea salt, to taste

Cooking Instructions
- Blend all the ingredients in a food processor until smooth.
- Transfer the avocado hummus to a bowl and cover with cling film.
- Chill in the fridge for one hour.
- Serve with warm flatbread, or use as a dip or spread.
- Serve with a healthy salad or in a wrap, also delicious as a pasta or pizza sauce.
