Mango, coconut and raspberry salad

Ingredients

  • rainbow peppercorn, crushed, for serving
  • fresh mint leaves, for serving
  • 1 fresh coconut, sliced
  • 1 x 125 g punnet raspberries
  • 2 ripe mangoes, peeled and thinly sliced

Cooking Instructions

  1. Distribute the mango between four bowls, and top with the raspberries, coconut and a scattering of mint leaves.
  2. Add a squeeze of lemon juice and lightly sprinkle with the crushed peppercorn. Serve immediately.
