Chocolate chip and pecan nut cookies

Ingredients

  • 250 g cake flour, sifted
  • 4 free-range eggs, separated
  • 80 g brown sugar
  • 120 g Pecan nuts, roasted and chopped
  • 120 g chocolate chips
  • 6 Tbsp butter
  • 3 tsp baking powder

Cooking Instructions

  1. Preheat oven to 180°C.
  2. To make your cookie dough cream together the butter and brown sugar in an electric mixer until pale and creamy, then beat in the eggs, adding one at a time.
  3. Now add the sifted flour and baking powder to form a smooth dough.
  4. Fold through the chocolate chips and chopped toasted pecan nuts.
  5. Roll the mixture into even bite sized balls and press to flatten on a baking tray lined with greaseproof paper.
  6. Bake for 12–15 minutes or until golden.
