Chocolate chip and pecan nut cookies

Ingredients
- 250 g cake flour, sifted
- 4 free-range eggs, separated
- 80 g brown sugar
- 120 g Pecan nuts, roasted and chopped
- 120 g chocolate chips
- 6 Tbsp butter
- 3 tsp baking powder

Cooking Instructions
- Preheat oven to 180°C.
- To make your cookie dough cream together the butter and brown sugar in an electric mixer until pale and creamy, then beat in the eggs, adding one at a time.
- Now add the sifted flour and baking powder to form a smooth dough.
- Fold through the chocolate chips and chopped toasted pecan nuts.
- Roll the mixture into even bite sized balls and press to flatten on a baking tray lined with greaseproof paper.
- Bake for 12–15 minutes or until golden.
