New-style BLT sandwich
A good bread and crisp rashers of the best bacon makes a meal of a sandwich. Serve it with a freshly made, hand-cut salsa and you’re onto something special.

Ingredients
- 1 small loaf sourdough bread
- 250g back bacon, grilled
- rocket, for serving
- 2 to 3 firm, ripe, red tomatoes, seeded and chopped
- 1 spring onions, chopped, to garnish
- 4 tbsp fresh coriander
- 5 ml chillies, halved lengthways
- 4 Tbsp olive oil
- 1 Tbsp wine vinegar
- salt, to taste

Cooking Instructions
- Slice the whole bread through horizontally.
- Sandwich with the hot bacon and rocket.
- Slice across for serving.
- Make tomato salsa by mixing together the tomatoes, spring onions, coriander, chillies, olive oil and vinegar. Add salt to taste.
- Serve the sandwich with lashings of the tomato salsa.
