New-style BLT sandwich

A good bread and crisp rashers of the best bacon makes a meal of a sandwich. Serve it with a freshly made, hand-cut salsa and you’re onto something special.

Ingredients

  • 1 small loaf sourdough bread
  • 250g back bacon, grilled
  • rocket, for serving
  • 2 to 3 firm, ripe, red tomatoes, seeded and chopped
  • 1 spring onions, chopped, to garnish
  • 4 tbsp fresh coriander
  • 5 ml chillies, halved lengthways
  • 4 Tbsp olive oil
  • 1 Tbsp wine vinegar
  • salt, to taste

Cooking Instructions

  1. Slice the whole bread through horizontally.
  2. Sandwich with the hot bacon and rocket.
  3. Slice across for serving.
  4. Make tomato salsa by mixing together the tomatoes, spring onions, coriander, chillies, olive oil and vinegar. Add salt to taste.
  5. Serve the sandwich with lashings of the tomato salsa.
