Chipotle and bacon jam BLT sandwich

Ingredients
- 1 tsp Chipotle seasoning
- 250 g Smoked Jalapeno Wood Smoked streaky bacon, diced
- 2 bella tomatoes, roughly chopped
- butter lettuce leaves, for serving
- 2 Tbsp coffee, brewed
- 12 slices cheddar cheese
- 6 tsp Dijon mustard, to taste
- 3 Tbsp French style mayonnaise
- 1 french loaf
- 2 Tbsp red wine vinegar, to serve
- 80 g brown sugar
- 6 garlic cloves, roughly chopped
- 1 medium red onion, sliced thinly

Cooking Instructions
- To make the jam, cook the bacon in a large saucepan on a medium heat until just starting to crisp. Drain of the fat, add the onions and garlic and cook for 5 minutes or until the onions soften.
- Stir in the remaining ingredients and cook for about 20 minutes, stirring occasionally, until the sauce thickens.
- Cook slightly then spoon into a bowl or a jar. Allow to cool completely.
- To make the BLT, slice the French loaf in half lengthways, then cut into 6 pieces widthways.
- Spread the 6 bases with mayonnaise, mustard and bacon jam.
- Top with a slice of cheese, a few pieces of bacon, sliced tomato, 2 lettuce leaves and the top halves of the French loaf.
