Chipotle and bacon jam BLT sandwich

Ingredients

  • 1 tsp Chipotle seasoning
  • 250 g Smoked Jalapeno Wood Smoked streaky bacon, diced
  • 2 bella tomatoes, roughly chopped
  • butter lettuce leaves, for serving
  • 2 Tbsp coffee, brewed
  • 12 slices cheddar cheese
  • 6 tsp Dijon mustard, to taste
  • 3 Tbsp French style mayonnaise
  • 1 french loaf
  • 2 Tbsp red wine vinegar, to serve
  • 80 g brown sugar
  • 6 garlic cloves, roughly chopped
  • 1 medium red onion, sliced thinly

Cooking Instructions

  1. To make the jam, cook the bacon in a large saucepan on a medium heat until just starting to crisp. Drain of the fat, add the onions and garlic and cook for 5 minutes or until the onions  soften.
  2. Stir in the remaining ingredients and cook for about 20 minutes, stirring occasionally, until the sauce thickens.
  3. Cook slightly then spoon into a bowl or a jar. Allow to cool completely.
  4. To make the BLT, slice the French loaf in half lengthways, then cut into 6 pieces widthways.
  5. Spread the 6 bases with mayonnaise, mustard and bacon jam.
  6. Top with a slice of cheese, a few pieces of bacon, sliced tomato, 2 lettuce leaves and the top halves of the French loaf.
