Chocolate brownie & citrus posset

Ingredients

  • Woolies Easy to Bake Chocolate Brownie Mix
  • Butter for the brownie mix
  • Eggs for the brownie mix
  • 100 g dark chocolate, melted
  • 2 cups Woolies Cream
  • ¾ cup caster sugar
  • 1 ClemenGold®, zested and juiced
  • 1 lemon, zested and juiced

Cooking Instructions

  1. Prepare the brownie mix according to the packet instructions. Bake until the ends have set but the centre is still a bit runny. 
  2. Remove the baked brownies from the oven and set aside to cool. Once cooled, gently press down the brownie, using the back of a tablespoon, to create more space for your posset layer. 
  3. For the posset, combine the cream, sugar, lemon zest and ClemenGold® zest in a large pan or pot. Place over a medium heat and stir gently to dissolve the sugar. Allow the mixture to cook for another 10 minutes, stirring often to prevent the cream from bubbling over. 
  4. Strain the mixture and discard the zest. Stir the lemon and ClemenGold® juice through the cream before gently pouring over your brownie, creating a posset layer. Place in the fridge to set for 4 hours, before drizzling with melted chocolate.
