Shaved gouda and cabbage slaw

Ingredients
- 150 g mild gouda
- 1-2 baby cabbages
- 6-8 salad onions, thinly shredded
- 3 tbsp white wine vinegar
- 1 heaped tsp Dijon mustard
- 6 Tbsp olive oil, to drizzle
- 1/2 tsp cumin seeds, toasted
- sea salt and freshly ground black pepper, to taste

Cooking Instructions
- For the dressing, combine the white wine vinegar, Dijon mustard, olive oil, cumin seeds, salt and pepper.
- Thinly slice the cheese using a cheese slicer and the cabbage using a mandolin.
- Toss the cabbage, onions and cheese with the dressing and serve immediately.
