Beef koftas with saffron

Serves:8-10 portions

Ingredients

  • 12 bamboo skewers
  • 2 g saffron
  • 5 tbsp honey
  • 1 cup low fat plain yoghurt
  • 4 tbsp canola oil
  • large pinch salt
  • large pinch black pepper
  • 2 tsp cinnamon, ground
  • 60 ml coriander leaves, chopped
  • 1 tsp cumin, ground
  • 4 tbsp mint, chopped
  • 2 tbsp parsley, chopped
  • 1 onion, finely chopped
  • 1 tsp ginger, freshly grated
  • 3 garlic cloves, chopped
  • 500 g beef mince, lean

Cooking Instructions

  1. Pre-heat the oven to 200˚C.
  2. Place the onion, garlic, ginger, ground cinnamon, ground cumin, salt and pepper in food processer and blend until it resembles a chunky paste.
  3. Place the beef mince in a bowl and add the onion spice paste.
  4. Add the chopped herbs to the mixture and check the seasoning.
  5. Shape the mince into 30g balls, and shape each into an oval and set aside.
  6. Soak the skewers in cold water for at least 15 minutes before inserting into the oval beef koftas.
  7. Place the yoghurt in a bowl and add the honey and mix well.
  8. Place saffron in a cup and add 1tbsp boiling water, leave to steep before adding to the yogurt. Mix well and keep chilled until ready to serve.
  9. Place the koftas on a baking tray greased with the oil and bake until golden, turning the meatballs around after about 7 minutes. You can also cook them under the grill if you need more colour.
  10. Serve with the saffron yoghurt and garnish with coriander leaves.
