Beef koftas with saffron

Ingredients
- 12 bamboo skewers
- 2 g saffron
- 5 tbsp honey
- 1 cup low fat plain yoghurt
- 4 tbsp canola oil
- large pinch salt
- large pinch black pepper
- 2 tsp cinnamon, ground
- 60 ml coriander leaves, chopped
- 1 tsp cumin, ground
- 4 tbsp mint, chopped
- 2 tbsp parsley, chopped
- 1 onion, finely chopped
- 1 tsp ginger, freshly grated
- 3 garlic cloves, chopped
- 500 g beef mince, lean

Cooking Instructions
- Pre-heat the oven to 200˚C.
- Place the onion, garlic, ginger, ground cinnamon, ground cumin, salt and pepper in food processer and blend until it resembles a chunky paste.
- Place the beef mince in a bowl and add the onion spice paste.
- Add the chopped herbs to the mixture and check the seasoning.
- Shape the mince into 30g balls, and shape each into an oval and set aside.
- Soak the skewers in cold water for at least 15 minutes before inserting into the oval beef koftas.
- Place the yoghurt in a bowl and add the honey and mix well.
- Place saffron in a cup and add 1tbsp boiling water, leave to steep before adding to the yogurt. Mix well and keep chilled until ready to serve.
- Place the koftas on a baking tray greased with the oil and bake until golden, turning the meatballs around after about 7 minutes. You can also cook them under the grill if you need more colour.
- Serve with the saffron yoghurt and garnish with coriander leaves.
