Berry, coconut and almond bars

Ingredients

  • 1 lemon, zested and juiced
  • 4 tsp corn flour
  • 2/3 cups icing sugar
  • 4 cups fresh mixed berries (blueberries, raspberries, blackberries, gooseberries, strawberries)
  • 1 cup cold coconut oil (the coconut oil should be set, not runny)
  • 1 Free-range egg
  • a pinch salt
  • 7 1/2 ml baking powder
  • 6 tbsp brown sugar
  • 2 tbsp desiccated coconut
  • 1/2 cup ground almonds
  • 1 cup cake flour

Cooking Instructions

  1. Line a deep square baking tin.
  2. Mix together flour, almonds, coconut, sugar, baking powder and salt.
  3. Using your fingers, rub in the coconut oil until the mixture resembles breadcrumbs.
  4. Mix in the egg then press 2/3 of the dough into the baking tin.
  5. Mix together the berries, icing sugar, corn flour, lemon juice and zest.
  6.  Scatter onto the pastry.
  7. Crumble the remaining dough onto the berries.
  8. Bake for 45 minutes at 180 until golden brown.
  9. Leave to cool.
  10. Cut into squares and store in the fridge.
