Tuna-stuffed Baked Mushrooms
Ingredients
- 4 tbsp plain bread crumbs
- 2 tbsp coriander
- 250 g low fat smooth cottage cheese
- 50 g feta cheese
- 2 tins tuna
- 2 spring onions, chopped
- 2 tbsp olive oil
- 1 tsp fresh thyme, chopped
- salt and pepper
- 4 brown mushroom steaks

Cooking Instructions
- Preheat oven to 180C
- Place the mushrooms, gill-side up, onto a greased oven tray.
- Season with salt and pepper, then sprinkle with the thyme, then drizzle with olive oil and roast for 20 minutes until the mushrooms become tender.
- In a bowl, mix together the spring onions, tuna, feta, cream cheese and coriander then spoon mixture onto the mushrooms.
- Sprinkle with the breadcrumbs, then return to the oven to bake for another 10 minutes.
- Serve with a side salad
