Quesadillas with spinach

Ingredients

  • 8 Roma tomatoes, halved
  • 3 Tbsp olive oil, to drizzle
  • salt
  • 2 tsp white sugar
  • 2 a few sprigs of thyme
  • large handful fresh coriander
  • 4 large wraps
  • 500 g spinach, blanched and drained
  • 250 g portabellini mushrooms, sliced and stir-fried
  • 100 g mature cheddar, grated
  • 125 g mozzarella, grated
  • guacamole
  • 4 tbsp sour cream

Cooking Instructions

  1. To make the salsa, pre-heat the oven to 220°C.
  2. Place the tomatoes on a sheet pan and drizzle with the olive oil. Season with the sugar and salt and top with the fresh thyme sprigs.
  3. Place in the oven and allow to roast for 20 minutes until the tomatoes are soft and the edges have started caramelising.
  4. Remove from the oven and blend with the coriander. Season to taste and set aside.
  5. To make the quesadillas, top two of the tortilla wraps with half of the spinach, mushrooms and cheese then top with the remaining two tortillas and grill in a large pan until golden brown on both sides, with the cheese completely melted inside.
  6. Remove from the pan and slice into wedges.
  7. Serve with the tomato salsa, guacamole and sour cream.
