Pulled pork and beetroot slaw tacos

Ingredients
- 1 Easy To Cook Pullled Pork
- 120 g beetroot, julienne
- 125 g carrots, julienne
- 1/2 red onion
- 1 cup red cabbage
- 2 Tbsp black sesame seeds
- 1 handful coriander leaves
- 1 Tbsp rice vinegar
- 2 fresh limes
- 1 tsp sugar
- salt and pepper
- 8 taco shells
- 1 Easy To Cook Pulled Chicken
- 180 g pineapple
- 1 avocado
- 75 g baby tomatoes
- 15 g parsley
- 2 Tbsp Extra virgin olive oil
- 4 soft flour tortillas

Cooking Instructions
To make the pulled pork and beetroot slaw tacos:
Ingredients:
Woolworths Easy to Cook Pulled Pork
120g beetroot, julienne
125g carrot, julienne
½ red onion, thinly sliced
1 cup red cabbage, shredded
2 Tbps black sesame seeds
1 handful coriander leaves
1 Tbps rice vinegar
1 lime, juiced
1 tsp sugar
Salt and pepper to taste
8 taco shells
Instructions:
- Cook the pork in the oven according to the packet instructions.
- In a large bowl, toss together the beetroot, carrots, onion, cabbage, sesame seeds and coriander seeds.
- Mix together the vinegar, lime juice, sugar, salt and pepper, then pour over the coleslaw and toss well to dress.
- Place some salad into the taco shell, then top with the pulled pork.
- Garnish with more fresh coriander to serve.
To make the pulled chicken and pineapple salsa tacos:
Ingredients:
Woolworths Easy to cook pulled chicken
180g pineapple, diced
1 avocado, diced
1 lime, juiced
75g baby tomatoes, quartered
15g chopped parsley
2 Tbps olive oil
Salt and pepper
4 soft flour tortillas
Instructions:
- Cook the chicken according to the packet instructions.
- Mix together the pineapple, avo, lime juice, tomatoes, parsley, olive oil, salt and pepper.
- Warm the flour tortillas, then place the salsa into the middle before topping with the chicken.
