Bunless Rainbow Crunch Veggie Burger

Ingredients

  • 4 spinach, sweetcorn and bulgur burgers
  • 1 Tbsp avocado lemon flavoured oil
  • 1 tub guacamole
  • 350 g coleslaw
  • 100 g beetroot crisps
  • 80 g baby spinach
  • 150 g crunchy mixed sprouts
  • red miso dressing
  • sea salt and freshly ground black pepper

Cooking Instructions

  1. Pan-fry the burgers in the avocado oil in a non-stick pan, over a medium heat until golden on each side and warmed through.
  2. Divide the coleslaw salad, dressed with red miso dressing between 4 plates.
  3. Top with baby spinach, your warm veggie burgers, and serve with a dollop of guacamole and a sprinkle of crunchy sprouts, season to taste.
  4. Hint: Eat with a side of beetroot crisps!
