Pickled Fish Fritters

Ingredients

  • 4 tbs fruit chutney
  • 6 tbs coriander
  • 500 grams pickled fish
  • 1/2 cup mayonnaise
  • 1 cup buttermilk
  • oil or sunflower oil, for frying
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 2 cups cake flour

Cooking Instructions

  1. Mix together the flour, baking powder, bicarb and salt.
  2. Whisk together egg and buttermilk then mix enough into the dry ingredients to form a thick batter.
  3. Fold in the pickled fish and 4 Tbsp of coriander.
  4. Heat oil then drop spoonfulls of mixture into the oil and fry until browned.
  5. Drain on kitchen paper to remove excess oil.
  6. For the dipping sauce, mix together the mayonnaise, chutney and the last 2 Tbsp of coriander and serve alongside the hushpuppies.
