Pickled Fish Fritters

Ingredients
- 4 tbs fruit chutney
- 6 tbs coriander
- 500 grams pickled fish
- 1/2 cup mayonnaise
- 1 cup buttermilk
- oil or sunflower oil, for frying
- 1 egg
- 1 tsp salt
- 1/2 tsp bicarbonate of soda
- 1 tsp baking powder
- 2 cups cake flour

Cooking Instructions
- Mix together the flour, baking powder, bicarb and salt.
- Whisk together egg and buttermilk then mix enough into the dry ingredients to form a thick batter.
- Fold in the pickled fish and 4 Tbsp of coriander.
- Heat oil then drop spoonfulls of mixture into the oil and fry until browned.
- Drain on kitchen paper to remove excess oil.
- For the dipping sauce, mix together the mayonnaise, chutney and the last 2 Tbsp of coriander and serve alongside the hushpuppies.
