Spiced pork meatballs

Ingredients

  • 5 tbsp extra virgin olive oil
  • 20 g coriander, chopped
  • 4 spring onion, thinly sliced at an angle
  • 12 Bella tomatoes, chopped into small pieces
  • 1 kg pork mince
  • 2 tsp salt
  • 1 big handful Italian parsley, finely chopped
  • 1 cup Fine soft white breadcrumbs
  • 1 Red chilli, deseeded and finely sliced
  • 4 cloves garlic, crushed
  • 6 tsp Moroccan rub
  • 1 onions, finely chopped
  • 3 tbsp olive oil

Cooking Instructions

  1. Heat 3 tablespoons of olive oil in a pan over a low heat and slowly caramelise the chopped onions until tender and golden.
  2. After the onions have been cooking for about 15 minutes, add the Moroccan rub and stir to combine.
  3. Add the garlic and chilli and cook for 2 more minutes, stirring frequently. Set aside and allow to cool.
  4. Combine the cooled onion mix, mince, breadcrumbs, eggs, parsley and salt.
  5. Divide the mince into 12 even-sized round meatballs.
  6. Heat a pan with the remaining tablespoon of olive oil over a high heat and cook the meatballs in batches until golden on all sides.
  7. Combine the ingredients for the tomato salsa and mix well. Serve with the cooked meatballs.
