Sour milk pancakes

Ingredients

  • 120 g cake flour
  • 2 tsp white sugar
  • 1 tsp Salt
  • 1/2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1 cup sour milk
  • 2 free range eggs
  • 1 tbsp canola oil
  • butter, for frying

Cooking Instructions

  1. In a bowl, sieve the dry ingredients together.
  2. Separately, beat the milk, eggs and oil together until well combined.
  3. Make a well in the center of the dry ingredients and pour in the wet ingredients. Whisk until a smooth batter is formed.
  4. Heat a large non-stick, frying pan over medium heat. Add a small knob of butter to grease the pan.  Ladle ¼ cup of the batter into the pan to male a 10-12cm pancake. Cook for 1-2 minutes, until bubbles appear.  Flip the pancake and cook the other side. Repeat with the remaining batter.
  5. Serve warm with the toppings of your choice.
