Seared steak rice bowl

Ingredients

  • 4 tbsp soy sauce
  • pinch chilli flakes
  • 1 tbsp sugar
  • 1 tbsp asian rice vinegar
  • 2 x thick cut sirloin steaks
  • 4 tbsp asian rice vinegar
  • 3 tbsp white sugar
  • 1 tsp salt
  • 500 ml cooked sushi rice, still warm
  • 1 avocado, diced
  • 1/2 cucumber, diced
  • 2 spring onion, finely sliced
  • pickled ginger
  • fresh coriander
  • Toasted sesame seeds

Cooking Instructions

  1. Mix together the soy sauce, chilli flakes, sugar and vinegar, then add the steaks and leave to marinate while preparing the rice.
  2. Mix together the rice vinegar, sugar and salt until the sugar is fully dissolved.
  3. Pour onto the rice and mix through to evenly distribute.
  4. Cook the pan in a searing hot griddle pan until charred on the outside and still very pink on the inside.
  5. Place the rice into bowls, then slice the steak thinly and place on top of the rice.
  6. Top each bowl with the garnishes before serving.
