Ingredients
- 500g prawns, steamed
- juice of 3 limes
- 2 Tbsp fresh ginger, grated
- 8-10 ripe nectarines, halved
- mint leaves, to scatter
- pistachio toasted, to garnish

Cooking Instructions
- Toss the prawns with the lime juice, ginger and quartered nectarines.
- Squeeze the juice from the ripe nectarines over the salad.
- Garnish with mint leaves and pistachio nuts.
