Steamed prawn, lime and nectarine salad

Ingredients

  • 500g prawns, steamed
  • juice of 3 limes
  • 2 Tbsp fresh ginger, grated
  • 8-10 ripe nectarines, halved
  • mint leaves, to scatter
  • pistachio toasted, to garnish

Cooking Instructions

  1. Toss the prawns with the lime juice, ginger and quartered nectarines.
  2. Squeeze the juice from the ripe nectarines over the salad.
  3. Garnish with mint leaves and pistachio nuts.
