Marinated pork and plum salad

Prep Time:30 minutes, plus one hour to marinate

Ingredients

  • 8 plums, halved and stoned
  • 1/2 cup plum sauce
  • 500 g pork fillet
  • 3 tbsp soya sauce
  • 375 ml Wild blossom honey
  • fresh ginger, grated
  • 5 star anise, whole
  • 5-6 ripe plums, cut into wedges
  • 150 g watercress leaves, tough stalks removed
  • sesame seed oil

Cooking Instructions

  1. Preheat the oven to 200°C
  2. Leave the pork in the marinade for at least an hour, or overnight if more convenient
  3. Remove the pork from the marinade, reserving the latter
  4. Brown the pork all over in a nonstick pan, then place in a baking pan just large enough to take it and the reserved marinade, which should now be added
  5. Roast for 20 minutes, basting once or twice
  6. Once cooked, allow to cool, then slice. Mix the sliced pork with the cooking juices and spoon onto a platter or individual plates
  7. After slicing the plums, add them and the watercress and drizzle with sesame oil
