Marinated pork and plum salad

Ingredients
- 8 plums, halved and stoned
- 1/2 cup plum sauce
- 500 g pork fillet
- 3 tbsp soya sauce
- 375 ml Wild blossom honey
- fresh ginger, grated
- 5 star anise, whole
- 5-6 ripe plums, cut into wedges
- 150 g watercress leaves, tough stalks removed
- sesame seed oil

Cooking Instructions
- Preheat the oven to 200°C
- Leave the pork in the marinade for at least an hour, or overnight if more convenient
- Remove the pork from the marinade, reserving the latter
- Brown the pork all over in a nonstick pan, then place in a baking pan just large enough to take it and the reserved marinade, which should now be added
- Roast for 20 minutes, basting once or twice
- Once cooked, allow to cool, then slice. Mix the sliced pork with the cooking juices and spoon onto a platter or individual plates
- After slicing the plums, add them and the watercress and drizzle with sesame oil
