Abigail's Ultimate Bolognese

Ingredients
- 2 T Mediterranean extra virgin olive oil
- 250 g Pork lean mince
- 250 g Free range lean beef mince
- 1 red or white onion
- 2 leeks, chopped
- 4 sage leaves
- 3 sprigs rosemary
- 1 fresh bay leaf (use 2 if using dried)
- 4 cans 400 g canned tomatoes
- 4 T tomato paste
- 1 cup organic liquid beef stock
- 1 T fish sauce
- 180 ml Chilli and Garlic stir-through pasta sauce
- 500 g Rigatoni pasta, cooked al dente
- Parmesan, grated for serving

Cooking Instructions
- Preheat the oven to 160° C. Heat the oil in a large cast-iron pan.
- Add the mince and cook over a medium heat for 10 minutes until golden brown. Remove from the pan.
- Add the onion and leeks and cook until soft and slightly golden. Add the meat and herbs, then add in two cans of water and simmer. Once the liquid has reduced by half, add the tomatoes, tomato paste and stock.
- Cover tightly with foil or greaseproof paper and cover it with a lid. Bake for 1 hour. Stir through the fish sauce and the pasta sauce. Serve with the rigatoni and grated Parmesan.
