Aubergine Jalfrezi

Ingredients

  • Jalfrezi spice blend
  • 2 T vegetable oil
  • medium-sized aubergine, sliced lengthwise into thick strips
  • 1 small yellow pepper, sliced lengthwise into strips
  • 1 small red pepper, sliced lengthwise into strips
  • fresh coriander to garnish

Cooking Instructions

  1. Heat oil to medium-high heat in a pan. Add the aubergine and stir-fry for 5 minutes.
  2. Add the peppers and stir-fry for 2 minutes.
  3. Add the contents of the jar of sauce. Rinse the remaining sauce with 100 ml of water and add this to the pan. Reduce heat to medium and cook (lid off) for 5 minutes, or until the vegetables are tender.
  4. Add the spice blend and cook for a further minute. Season to taste.
  5. Serve with basmati rice, poppadoms and freshly chopped coriander, with any of the Woolworths pickles or chutneys of your choice.
  6. Alternatively, replace aubergine with WW free-range chicken breast fillets.
