Goat's cheese salad

Ingredients
- 3-4 heads Chicory, for serving
- 3 x 100 g Chevin goat's cheese
- freshly ground black pepper, to taste
- salt
- 9 Tbsp white wine vinegar
- 1/3 cup Walnut oil
- 6 tbsp maple syrup
- a handful fresh basil
- walnuts
- 1/4 red onion, finely sliced
- 400 g beetroot, cooked
- 1/2 Red cabbage, thinly shredded

Cooking Instructions
- Place the cabbage, beetroot and onion onto a serving platter.
- Top with the goat’s cheese, chicory, walnuts and sprigs of basil.
- To make the dressing, mix the maple syrup, walnut oil and vinegar.
- Season the dressing with salt and pepper and drizzle it over the salad.
- Serve the salad with hot, crusty ciabatta.
