Goat's cheese salad

Ingredients

  • 3-4 heads Chicory, for serving
  • 3 x 100 g Chevin goat's cheese
  • freshly ground black pepper, to taste
  • salt
  • 9 Tbsp white wine vinegar
  • 1/3 cup Walnut oil
  • 6 tbsp maple syrup
  • a handful fresh basil
  • walnuts
  • 1/4 red onion, finely sliced
  • 400 g beetroot, cooked
  • 1/2 Red cabbage, thinly shredded

Cooking Instructions

  1. Place the cabbage, beetroot and onion onto a serving platter.
  2. Top with the goat’s cheese, chicory, walnuts and sprigs of basil.
  3. To make the dressing, mix the maple syrup, walnut oil and vinegar.
  4. Season the dressing with salt and pepper and drizzle it over the salad.
  5. Serve the salad with hot, crusty ciabatta.
