Crunchy vegetable and mozzarella salad

Ingredients
- 2 sticks celery, chopped
- 2 baby cabbage, finely shredded
- 6 spring onions, chopped, to garnish
- 100 g mung-bean sprouts
- 150 g shredded Fior di latte
- 35 g honey & spice seed & nut sprinkle
- 1 tsp white wine vinegar
- 4 Tbsp lemon juice
- 3 cloves garlic, crushed
- 375 ml Wild blossom honey
- 2 Tbsp olive oil, to drizzle
- sea salt and freshly ground black pepper, to taste

Cooking Instructions
- Shave ribbons from the carrots and celery using a vegetable peeler.
- Mix the vegetables with the dressing, then mix in the fior di latte.
- Check the seasoning and sprinkle the seed-and-nut mix over each serving.
