Crunchy vegetable and mozzarella salad

Ingredients

  • 2 sticks celery, chopped
  • 2 baby cabbage, finely shredded
  • 6 spring onions, chopped, to garnish
  • 100 g mung-bean sprouts
  • 150 g shredded Fior di latte
  • 35 g honey & spice seed & nut sprinkle
  • 1 tsp white wine vinegar
  • 4 Tbsp lemon juice
  • 3 cloves garlic, crushed
  • 375 ml Wild blossom honey
  • 2 Tbsp olive oil, to drizzle
  • sea salt and freshly ground black pepper, to taste

Cooking Instructions

  1. Shave ribbons from the carrots and celery using a vegetable peeler. 
  2. Mix the vegetables with the dressing, then mix in the fior di latte. 
  3. Check the seasoning and sprinkle the seed-and-nut mix over each serving.
