Banana and cinnamon honey cake

Serves:8-10

Ingredients

  • 2 ripe bananas, peeled
  • 60 g butter, plus extra for greasing
  • 100 g raw flaked almonds
  • 85 g raisins
  • 2 free-range eggs, beaten
  • 105 g brown sugar
  • 90 g honey
  • 1 cinnamon stick
  • 2 tsp baking powder
  • 250 g flour

Cooking Instructions

  1. Heat the oven to 180 °C.
  2. Grease and line the base and sides of a 20 cm round cake tin with baking paper.
  3. Mix the flour, baking powder and cinnamon together in a large bowl.
  4. Melt the honey, sugar and butter together in a small saucepan over a low heat.
  5. In a separate bowl, mash the bananas with a fork then mix in the beaten eggs.
  6. Make a well in the centre of the flour and pour in the melted butter and sugar mixture, and beat together.
  7. Add the banana and egg mixture and beat again, then fold in the raisins.
  8. Transfer the mixture to the prepared cake tin and level the surface.
  9. Scatter with the flaked almonds and bake for 50 minutes – 1 hour, or until a skewer inserted comes out clean. Cover the cake with foil after about 40 minutes if the surface is browning too quickly.
  10. Remove from the oven and leave to cool in the tin.
