Banana and cinnamon honey cake

Ingredients
- 2 ripe bananas, peeled
- 60 g butter, plus extra for greasing
- 100 g raw flaked almonds
- 85 g raisins
- 2 free-range eggs, beaten
- 105 g brown sugar
- 90 g honey
- 1 cinnamon stick
- 2 tsp baking powder
- 250 g flour

Cooking Instructions
- Heat the oven to 180 °C.
- Grease and line the base and sides of a 20 cm round cake tin with baking paper.
- Mix the flour, baking powder and cinnamon together in a large bowl.
- Melt the honey, sugar and butter together in a small saucepan over a low heat.
- In a separate bowl, mash the bananas with a fork then mix in the beaten eggs.
- Make a well in the centre of the flour and pour in the melted butter and sugar mixture, and beat together.
- Add the banana and egg mixture and beat again, then fold in the raisins.
- Transfer the mixture to the prepared cake tin and level the surface.
- Scatter with the flaked almonds and bake for 50 minutes – 1 hour, or until a skewer inserted comes out clean. Cover the cake with foil after about 40 minutes if the surface is browning too quickly.
- Remove from the oven and leave to cool in the tin.
