Pap with chakalaka and wors

Ingredients

  • 1 litre of water
  • 2 tsp salt
  • 2 cups Woolworths braai pap
  • canola oil, for frying
  • 1 large onion, rougly chopped
  • 4 garlic cloves, finely chopped
  • 1 Tbsp ground cumin
  • 1 Tbsp ground coriander
  • 2 tsp dried thyme
  • 2 tsp paprika
  • 2 tsp cayenne pepper
  • 1 tbsp mustard seeds, crushed
  • 2 large carrots, peeled and grated
  • 1/4 head red cabbage
  • 1 green pepper, roughly chopped
  • 1 red pepper, roughly chopped
  • 1 x 400 g Baked beans
  • 1/2 cup apple cider vinegar
  • salt and black pepper
  • 1 kg boerewors
  • 400 ml heat and pour gravy

Cooking Instructions

  1. For the pap: Bring the water to the boil along with the salt. Add the flour and begin stirring gently. Once all combined begin stirring a little faster over a slightly lower heat. Continue stirring for 5-7 minutes before tasting if extra seasoning is needed. 
  2. For the chakalaka: Heat the oil over a medium heat before adding the onions and slowly cooking until caramelized. Add the garlic and spices and begin stirring together in the pot to toast the spices and combine the ingredients. 
  3. After about 1 minute of cooking add the carrots, cabbage and peppers. At this stage the pot might seem dry, just add some oil.
  4. Once the veggies have softened add the beans, vinegar and season with salt and freshly ground black pepper. 
  5. Prepare the sausage by adding the oil to a pan and heating over a medium heat. Add the sausage and begin cooking slowly, until it begins to brown slightly, about 5 minutes. 
  6. Turn over and cook the other side in the same manner, serve  the sausage with the pap, chakalaka and gravy prepared as instructed.
