Fruity bran muffins

Ingredients
- 5 ml cinnamon, ground
- 5 ml vanilla paste
- 150 g dates, chopped
- 150 g Chopped dried fruit, figs, apricot, apple or fresh fruit like berries
- 4 tsp bicarbonate of soda
- 5 ml salt
- 60 g digestive bran
- 225 g cake flour
- 150 g nutty wheat flour
- 100 ml low fat milk
- 6 tbsp brown sugar
- 45 ml canola oil
- 2 eggs

Cooking Instructions
- Whisk the eggs, oil and sugar together in a large bowl.
- Add the remaining ingredients and mix until well combined.
- Store in an airtight container in the fridge.
- To bake, pre-heat the oven to 180°C.
- Grease the muffin pan well and fill each hole about two thirds with the muffin mixture.
- Bake for about 20-25 minutes.
- Remove from the tray to allow them to cool down.
