Fruity bran muffins

Ingredients

  • 5 ml cinnamon, ground
  • 5 ml vanilla paste
  • 150 g dates, chopped
  • 150 g Chopped dried fruit, figs, apricot, apple or fresh fruit like berries
  • 4 tsp bicarbonate of soda
  • 5 ml salt
  • 60 g digestive bran
  • 225 g cake flour
  • 150 g nutty wheat flour
  • 100 ml low fat milk
  • 6 tbsp brown sugar
  • 45 ml canola oil
  • 2 eggs

Cooking Instructions

  1. Whisk the eggs, oil and sugar together in a large bowl.
  2. Add the remaining ingredients and mix until well combined.
  3. Store in an airtight container in the fridge.
  4. To bake, pre-heat the oven to 180°C.
  5. Grease the muffin pan well and fill each hole about two thirds with the muffin mixture.
  6. Bake for about 20-25 minutes.
  7. Remove from the tray to allow them to cool down.
