Vegan bobotie

Plant-based ingredients for the win!
Don’t you just love it when you can turn a favourite local comfort food dish into a tasty plant-based version?

Ingredients

  • 1 large onion, chopped
  • 2 T olive oil
  • 1 T medium curry powder
  • ½ t ground turmeric
  • 1 t fresh ginger finely chopped
  • 1 garlic clove, finely chopped
  • 1 T apple cider vinegar
  • 500 g Beyond™ Beef Mince
  • 200 g cooked barley
  • 1 thick slice white bread (or 2 thin slices)
  • 50 g flaked almonds
  • 50 g sultanas
  • 2 T fruit chutney
  • 350 g soft tofu
  • ½ cup almond milk
  • 2 bay leaves

Cooking Instructions

For the topping: 

350 g soft tofu
½ cup almond milk  
1 t turmeric
1 t curry powder 
1 cup Woolworths vegan béchamel sauce
salt, to taste 
2 bay leaves

METHOD:

  1. Preheat the oven to 180°C. Fry the onion in the olive oil until soft. 2 In a bowl, mix the curry powder, turmeric, ginger, garlic, vinegar, sugar, salt and pepper. 
  2. Add to the onion and fry for 2 minutes. Add the mince and stir well. Cook for 5 minutes, then add the barley.  
  3. In another bowl, soak the bread in the almond milk. Remove the bread and reserve the milk. 
  4. Mash the bread with a fork and add the chutney. Mix well and add to the mince mixture. 
  5. Stir in the almonds and sultanas, then transfer the mince to a greased ovenproof dish. 
  6. Blend the topping ingredients (except for the bay leaves), pour over the mince, top with the bay leaves and bake for 30-45 minutes.
