Ingredients
- 1 large onion, chopped
- 2 T olive oil
- 1 T medium curry powder
- ½ t ground turmeric
- 1 t fresh ginger finely chopped
- 1 garlic clove, finely chopped
- 1 T apple cider vinegar
- 500 g Beyond™ Beef Mince
- 200 g cooked barley
- 1 thick slice white bread (or 2 thin slices)
- 50 g flaked almonds
- 50 g sultanas
- 2 T fruit chutney
- 350 g soft tofu
- ½ cup almond milk
- 2 bay leaves

Cooking Instructions
For the topping:
350 g soft tofu
½ cup almond milk
1 t turmeric
1 t curry powder
1 cup Woolworths vegan béchamel sauce
salt, to taste
2 bay leaves
METHOD:
- Preheat the oven to 180°C. Fry the onion in the olive oil until soft. 2 In a bowl, mix the curry powder, turmeric, ginger, garlic, vinegar, sugar, salt and pepper.
- Add to the onion and fry for 2 minutes. Add the mince and stir well. Cook for 5 minutes, then add the barley.
- In another bowl, soak the bread in the almond milk. Remove the bread and reserve the milk.
- Mash the bread with a fork and add the chutney. Mix well and add to the mince mixture.
- Stir in the almonds and sultanas, then transfer the mince to a greased ovenproof dish.
- Blend the topping ingredients (except for the bay leaves), pour over the mince, top with the bay leaves and bake for 30-45 minutes.
