Yellowtail ceviche

Ingredients

  • 1 red chilli, roughly chopped
  • 500 g Woolworths diced sweet potato
  • 400 g Yellowtail, cubed
  • salt, to taste
  • 4 Tbsp extra virgin olive oil, plus extra for drizzling
  • red wine vinegar, to serve
  • 1 red pepper, roasted and finely chopped
  • 1 tsp chilli paste
  • 1/4 tsp ginger, grated
  • 6 garlic cloves, finely chopped
  • mint, to garnish
  • small handful coriander, finely chopped
  • 4 limes,finely grated zest

Cooking Instructions

  1. Place the yellowtail in a bowl, then drizzle over the lime juice and stir to coat the fish well. Set aside to marinate for 5 minutes.
  2. Cook the sweet potatoes in the microwave for 5–6 minutes, or until tender.
  3. Spoon the fish and sweet potatoes into a mixing bowl, add the dressing and toss to combine. Serve garnished with mint.
