Pocket-friendly melon and prawn salad

Ingredients
- slices of watermelon, chunks
- spanspek
- 1/4 sweet melon
- prawns, steamed
- feta, sliced
- 2 onion, finely chopped
- 85ml verjuice
- 1 Tbsp pomegranate glaze
- 3 coriander, finely chopped
- pita wedges

Cooking Instructions
- Toss the slices of watermelon, spanspek and sweet melon with the steamed prawns and crumbled feta.
- Slice the onion into thin wedges, place in a small saucepan along with the verjuice and pomegranate glaze, and simmer gently for 5 to 10 minutes, or until the flavours have infused.
- Arrange over the salad and drizzle with remaining pan juices.
- Scatter with chopped coriander, season to taste and serve with toasted pita wedges.
