Lime, mint and coriander ceviche

Ingredients

  • 1 cucumber, thinly sliced into matchsticks
  • 6 tbsp olive oil
  • 1 jalapeno chillies
  • sea salt and freshly ground black pepper, to taste
  • 1 avocado, stoned, peeled and diced
  • A small handful coriander, finely chopped
  • A handful torn fresh mint leaves
  • 4 small spring onions, finely chopped
  • 4 portions of fresh salmon fillet (150g – 200g each)
  • 1 tsp ginger, finely chopped or grated
  • 1/4 cup lime juice

Cooking Instructions

  1. In a glass bowl, combine the lime juice, jalapeno pepper, ginger and olive oil. 
  2. Add the diced salmon and toss together. 
  3. Cover with plastic and chill ofr 1 hour, stirring occasionally, until the fish has started to go pale. 
  4. Add the remaining ingredients, season with salt and pepper and stir to combine. 
  5. Serve with lime wedges.
