Prawn, coconut and tamarind salad cups

Ingredients

  • 3 Tbsp Kikkoman Less Sodium Soy Sauce
  • 3/4 cup Carrots, cut into matchsticks
  • 1/2 cup Fresh coconut, cut into matchsticks
  • 1 1/2 cups Pre-cooked garlic and chilli prawns, tails removed
  • 1/3 cup Crispy onion sprinkles
  • 1 Tbsp black sesame seeds
  • 12 cos lettuce leaves
  • 50 g fresh coriander
  • small bunch basil leaves
  • 2 tbsp fish sauce
  • 1 1/2 Tbsp lime juice
  • 2 Tbsp Blue Elephant Tamarind Dressing

Cooking Instructions

  1. For the dressing, combine the tamarind dressing, lime juice, fish sauce and soya sauce and set aside.
  2. For the filling, combine the carrot, coconut, prawns, basil and coriander. Add to the salad dressing mixture and toss gently to combine.
  3. To assemble, lay the cos lettuce leaves on a serving plate and top each leaf with some of the dressed prawn mixture.
  4. Top the salad cups with the crispy onion sprinkles and black sesame seeds, and serve.
