Italian spaghetti with hot pepper

Ingredients

  • 180 g Delizie Di Calabria garlic, oil & hot pepper condiment
  • Toasted breadcrumbs
  • 400 g uncooked spaghetti
  • Parmesan, grated, for serving
  • 1/2 cup roughly chopped flat-leaf parsley
  • olive oil, to drizzle

Cooking Instructions

  1. Cook the spaghetti in a large saucepan of salted boiling water according to the packet instructions.
  2. About 4 minutes before the pasta is ready, heat 100g of garlic, oil, toasted bread crumbs and Calabria hot pepper condiment in a large frying pan and sauté the garlic and chilli. Add ½ cup of hot pasta water to stop the cooking any further. Remove from the heat while you drain the pasta.
  3. Return the pan to high heat and add the pasta, parsley and a little more olive oil. Keep tossing the pasta. The pasta water and oil will emulsify thickening and coating the spaghetti.
